Corporate Executive Chef Ron Fougeray

Executive Chef Ron Fougeray brings a philosophy of refined simplicity to his craft, championing honest ingredients, precise technique, and a deep respect for the culinary process. Known for his calm intensity and hands-on leadership, he guides his teams with collaboration, integrity, and a shared pride in their work.

He joined Splashes at Surf & Sand Laguna Beach, first as Executive Chef and later rising to Corporate Executive Chef for JC Resorts, where he now oversees multiple culinary programs, including AVANT and Veranda in San Diego. He continues to shape thoughtful, coastal-inspired dishes rooted in discipline, restraint, and an unwavering commitment to excellence.

Executive Chef Peter Lai

With over two decades of culinary expertise, Executive Chef Peter Lai brings a bold, innovative vision to Surf & Sand Laguna Beach’s signature seaside restaurant, Splashes. Chef Lai’s unique approach to coastal cuisine is rooted in a lifelong passion for ingredient-driven cooking, globally inspired techniques, and a deep respect for the seasons.

Regional Wine Sommelier & Cellar Master Joe Baumgardner

Our Sommelier & Cellar Master at JC Resorts, Joe Baumgardner, has brought new wines and exciting pairings to AVANT since October 2015. His interest in wine was sparked by his father’s wine collection. His father collected wines in the 1960s and 70s — and Joe took self-guided lessons about these fine labels by dipping into the family cellar when his father wasn’t looking.
Working in restaurants since he was 15, it became clear that his passion was strong enough to pursue a career in wine. He achieved the Sommelier Diploma from the International Sommelier Guild in 2008.

Sous Chef Julian Perez

Raised in Los Angeles, Chef Julian Perez developed a fascination of the culinary and hospitality world from an early age. 

Over time, Julian earned the opportunity to work at Alinea, a prestigious restaurant in Chicago, where he fine-tuned his technique and deepened his culinary knowledge. 

He has a strong passion for exploring diverse cuisines and is constantly challenging himself to refine and elevate each dish he creates. That dedication to growth ultimately led him to Surf & Sand, where he now serves as Sous Chef. Today, he continues to learn daily, drawing inspiration from his team, his experiences, and the ever-evolving culinary landscape.
