This week, Surf & Sand Resort’s signature Splashes restaurant launched its new summer menu featuring an array of seasonal ingredients and coastal California specialties.
Lunch and dinner menu highlights include Sweet Corn Soup; Sea Bass Crudo with grapefruit, pink peppercorns and chili oil; Grilled Shrimp with passion fruit mustard, avocado and bacon; Seared Scallops with farro risotto, cucumber, orange and ginger, and Rack of Lamb with confit tomatoes, salsa verde and feta cheese.
For those that want to end their meal on a sweet note, new desert dishes include Pineapple Carrot Cake with cream cheese and coconut ice cream and Strawberry Shortcake with buttermilk biscuits cheesecake bites and tarragon, and refreshing summer drinks include S’mores Martini, Superfruit low-calorie, antioxidant cocktails or the Summer Breeze made with fresh watermelon and mint.
