The Surf & Sand Resort in Laguna Beach has expanded do-it-your-way action stations to every meal of the day. Meeting groups can start the morning with a pancake bar (add-on fixings include berry compote, whipped cream and chocolate chips, along with maple syrup and butter), an omelet and eggs Benedict station (a healthy option subs an artichoke heart for the traditional English muffin and steamed spinach for Canadian bacon) and, if they like, a mix-your-own bloody mary bar. The very popular taco bar can be set up for lunch, while dinner can include a “build-your-own risotto” station or pasta bars. Besides being fun and interactive, these action bars allow guests to customize their own meals, a definite plus when today’s groups likely include a mix of people following vegan, vegetarian, gluten-free and paleo diets.
